Spicy Cowboy Caviar
Coming in hot with a twist on this hearty salsa, otherwise known as Cowboy Caviar! Reminiscent of pico de gallo, we added Boon Sauce to spice up this salsa snack - and it's delicious! It takes less than 25 minutes to make, and lasts for several days in the fridge!
Here’s what you’ll need:
For the salsa:
- 1 11oz. can of corn 
- 1 15oz. can of black beans, rinsed and drained 
- 1 15oz. can of pinto beans, rinsed and drained 
- 1 green bell pepper, diced 
- 1 green bell pepper, diced 
- 1 yellow bell pepper, diced 
- 1 red bell pepper, diced 
- 1 small red onion, diced 
- 2 cups cherry tomatoes, quartered 
- 2 avocados, chopped 
- 1 jalapeño, minced 
- 1 cup of Feta cheese 
- 1/4 cup of cilantro, chopped 
- Tortilla chips for serving 
For the Dressing:
- 2 Tbsp Boon Sauce 
- 2 Tbsp red wine vinegar 
- 2 Tbsp extra virgin olive oil 
- 1 tsp cumin 
- 1/2 tsp honey 
- 1 1/2 tsp salt 
- 1/2 tsp ground black pepper 
In a large bowl, combine the beans, corn, and peppers along with the rest of the salsa ingredients. Mix the dressing ingredients together in a separate bowl and pour overtop the salsa mixture.
Gently stir everything together and refrigerate for an hour or two before serving. Enjoy!
