Kimchi Fried Rice With Spam

Kimchi fried rice with spam is a delicious classic - but take it to another level with a Boon chili oil egg on top! Adding this traditional dish to your weekly rotation is the perfect way to use your leftover rice!

What you’ll need:

  • 1/3 can of spam (diced)

  • 2 cups of kimchi (cut/chopped)

  • 1 tablespoon cooking oil

  • 1/2 of a white onion (chopped)

  • 1 pinch of sugar

  • 1 egg

  • 2 cups white rice (preferably 1 day old)

  • 2 tablespoons of Gochujang

  • 1 tablespoon of sesame oil

  • Green onion to taste

  • Boon Sauce

Let's make some kimchi fried rice with spam and Boon Sauce. First, dice up one jar of Spam. Then cut up the kimchi and start heating your wok (or large cooking pan) over medium heat. Throw the spam in and cook until it’s crispy and a little golden. Remove and set it aside.

In the same pan, add the cooking oil, chopped onion, and kimchi. Add a pinch of sugar and mix it all together. 

While the kimchi cooks, use a separate pan to cook your Boon Sauce egg over easy (because we love ourselves). 

Add two cups of rice (it’s best if it’s day-old rice) to your kimchi mixture, along with the Gochujang and sesame oil, and mix well. Throw it in a bowl and be sure to scrape off the paddle - that’s the best part of the whole meal! Add the Boon egg on top and garnish with green onions, toasted seaweed, or your favorite toppings. Enjoy!
