Spicy Cucumber Salad

We love a refreshing spicy cucumber salad! Seasoned with Korean chili flakes, soy sauce, rice vinegar, garlic, sugar, sesame oil, and of course Boon Sauce, it’s perfect as a quick snack or side dish.

Here’s what you’ll need:

  • 4 Persian cucumbers, thinly sliced

  • 1 tablespoon salt

  • 1 teaspoon Korean chili flakes

  • 4 garlic cloves, minced

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 tablespoon Boon Sauce

  • 1 teaspoon sugar

  • Toasted sesame seeds to taste

Wash your cucumbers and slice them thinly. Add the cucumbers and salt to a bowl and let them sit in the fridge for 10-15 minutes to drain water.

While the cucumbers are sitting, combine the rest of your ingredients in a separate bowl and mix together. Once the cucumbers are ready, drain the excess water and rinse them off with cold water.

Pour the spicy sauce mixture over the cucumbers and stir to combine. Enjoy immediately, or refrigerate for up to 4 days!
