White Bean Soup with Boon Sauce

There’s something so satisfying about white bean soup that has a little extra kick! Wind down the year with this winter soup packed with flavor, herbs, and of course Boon Sauce.

What You’ll Need:

  • 2 tbsp olive oil

  • 1 medium shallot, chopped

  • 5 garlic cloves, minced

  • 1 small white onion, diced

  • 1 large carrot, chopped

  • 2 celery stalks, diced

  • 2 15 oz cans of Cannellini Beans, drained and rinsed

  • 1 tbsp Boon Sauce

  • 4 cups vegetable broth

  • 2 bay leaves

  • 1 tbsp oregano

  • 2 cups kale

  • 1 tsp salt

  • 1 tsp black pepper

Heat up the olive oil in a large pot and sauté the onions, garlic, and shallots until the onions start to soften. Next, add the carrots and celery and sauté for another few minutes.

Add the beans, bay leaves, oregano, Boon Sauce, vegetable broth, salt, and pepper. Bring your soup to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes.

Remove the bay leaves and add in the kale, and mix until wilted.

Add some more Boon atop your soup and enjoy!
